Ingredients
QUEST HOT & SPICY CAULIFLOWER MAC & CHEESE
- 1 head of cauliflower
 - 1 tbsp olive oil
 - ½ cup shredded cheddar cheese
 - ¼ cup parmesan cheese
 - ½ cup heavy cream
 - 1 tsp dijon mustard
 - ½ tsp garlic powder
 - Salt and pepper to taste
 - 1 bag Quest Hot and Spicy Tortilla Style Chips
 
Method
- Preheat the oven to 400 F and prepare a baking sheet with parchment paper.
 - Cut the cauliflower into florets and toss in olive oil.
 - Transfer to the baking sheet and bake for 15- 20 minutes and tender.
 - Place the cheeses, heavy cream, mustard and garlic powder into a small pot over medium heat.
 - Stir until melted and smooth.
 - Add salt and pepper to taste.
 - Remove the cauliflower from the oven and toss in the cheese.
 - Transfer to three serving bowls and top with crushed Quest Chips.
