For today’s post, I wanted to talk about pumpkin things!! ’Tis the season for my favorite festive gourd.

I LOVE all things pumpkin… aka I like sugar, cinnamon, cloves, and nutmeg lol. The Pilot isn’t the biggest fan of autumn gourds, but thankfully we’ve raised two little ladies who enjoy all of the fun seasonal flavors along with me.

(Just a heads up that these are some Trader Joe’s and they are RIDICULOUS. SO so good. I couldn’t even snap a pic before P had ripped open the package.)

Flourless pumpkin chocolate chip bars

I make these flourless pumpkin chocolate chip bars multiple times each year and they’re a family and friend favorite. They’re super easy to whip up and the flavor is even better the next day.

Crustless pumpkin pie

I love this idea for family holiday gatherings; everyone gets their own little pie.

Pumpkin bread

Just made a batch of this gluten-free pumpkin bread over the weekend! I added chocolate chips and it was perfection.

Coconut and ginger pumpkin soup

I’m definitely adding this delicious fall soup to the meal plan over the next couple of weeks – so excited to try it.

The best white bean pumpkin turkey chili

It seems like kind of a weird combo until you try it; it’s one of my all-time favorite fall recipes. I usually make this when the family comes over to carve pumpkins, and serve it along with apple pie.

Pumpkin oatmeal bake

This pumpkin oatmeal bake is a super convenient make-ahead breakfast option. It’s a gamechanger for busy fall mornings, it’s absolutely delicious, and the kids love it with a hard-boiled egg on the side.

Spinach pumpkin lasagna- just use gluten-free noodles!

I’ve made butternut squash lasagna many times, but figured it was time to add some pumpkin lasagna into the rotation. This would be a great make-ahead dinner option.

I LOVE the Starbucks treats but unfortunately they don’t have many gluten-free options. (I heard that’s about to change, so I’m hopeful!) I’m excited to make this gluten-free version at home, which likely has way better ingredients, too.

Marry Me Pumpkin Chicken

I haven’t tried this one yet, but I made regular Marry Me chicken last week and served it on top of pasta and the family loooooooved it. I’m excited to try this pumpkin twist!
