Here are the two ways to make luscious mac and cheese at home.

1. Stovetop Mac and Cheese

Best when you need instant comfort with creamy melt and no bake.

  1. Cook pasta to just shy of al dente (about 1 minute under package directions) so it doesn’t get soggy. Reserve some pasta water.
  2. Lower heat. In the same pot, over medium high heat, combine warm milk and evaporated milk along with the cheese. Add the cheeses gradually a handful at a time while whisking to make sure they blend into the sauce.
  3. Add a small splash of pasta water if needed to loosen the sauce; finish with butter and seasonings. Fold in pasta, serve immediately with optional toasted breadcrumbs.

2. Béchamel and Baked Mac and Cheese

This is the Best fway to mac an awesome homemade mac and cheese, It’s also stable to make in advance and reheat smoothly.

Make the Béchamel

  1. Preheat your oven to 350 degrees F.
  2. To make the béchamel sauce, start by melting in the butter in a saucepan over medium heat.
  3. Add the flour to the butter.
  4. Cook the flour until toasty. This removes the taste of raw flour while offering a nuttier taste.
  5. Now add in the seasoning milk, evaporated milk and cream. You need to whisk well this step and bring the liquid to a boil.
  6. Once it boils, you’ll see it thicken beautifully. At that point drop the heat to medium low and it’s time to add in thye cheese.
  7. Add one third of the amount of cheese into the liquid and whisk.

  9. Now take the cooked pasta that you cooked in boiling water just shy of aldente and add it into the sauce.
  10. Toss and make sure to coat the pasta very well with the sauce, as evenly as you can.

PS. I would eat this stovetop version of mac and cheese right away if I’m rushed and skip the baking. To do so, just add in all the cheese into the sauce and enjoy! 

Layer the Mac And Cheese

  1. In an oven safe dish, layer half of the pasta tossed in the creamy sauce at the bottom of the dish.
  2. Spread the second third of the shredded cheese on top.
  3. Now add the remaining half of the pasta mixture over that cheese layer.
  4. Finish off with the final third of the cheese amount. You should have no cheese left.
